INTRODUCTION

👨‍🍳 CULTURAL LEAVENING EXPERT-Mario Privitera 👨‍🍳  

My name is Mario Privitera, and I am known as a Cultural Leavening Expert, a title that embodies my passion for the myths, legends, and stories that narrate the traditions of my beloved Sicily.  

Since 2018, I have chosen to combine culture and gastronomy, sharing and preserving Sicilian traditions through my creations.  

I am the Owner, Chef, and Leavening Specialist of “PrimAlkimia”, an Artisanal Laboratory specializing in:  

🍞 Large traditional leavened products (panettone, pandoro, colomba, pandolce)  

🥐 Sweet and savory baked goods  

🍪 Breakfast biscuits and brioches  

🍕 Pre-cooked, high-hydration pizza bases  

📜 My Story  

Graduating from the Hospitality Institute of Giarre (CT) in 2017, I worked in restaurants, banquet halls, and hotels, but my dream was always to create something of my own—a place where I could fully express my creativity and passion.  

In Christmas 2018, driven by the desire to experiment and supported by my family, I made my first panettone.  I started as a self-taught baker, setting up a small kitchen in the back of my mother’s shop. With limited resources but immense determination, my first leavened creations came to life.  

On December 25th, after days of nonstop work, I delivered my last panettone. A few days later, the first messages of appreciation arrived. It was my first Christmas as a business owner, at just 19 years old, and I realized that this was my path.  

🌟 Achievements  

In 2024, I became part of the Young Leavening Specialists section of the “Academy of Italian Sourdough Masters and Panettone”, an acknowledgment of years of dedication and love for the art of natural leavening.  

❤️ The “L’amuri di Jaci” Project 

Also in 2024, driven by a desire to promote Sicilian culture, traditions, and gastronomy, I launched the project “L’amuri di Jaci”. Through this initiative and the cultural association I preside over, I aim to offer tourists visiting Acireale a special memory: an experience that captures the flavor and history of our land.
