INTRODUCTION

Francesco Rapetti, born in 1987, is from Milan and was introduced to the profession of Cooking at a young age by both his father and grandfather.  

Francesco understands the importance of a personal touch in his daily work, bringing this element into each of his creations.  

Tradition has been a cornerstone since he was 16, when he had his first work experience.  

In his dishes, the undeniable stars are classic recipes reimagined, along with unique and unexpected flavor combinations.  

However, he remains deeply committed to using seasonal products, blending this with a strong focus on innovation, such as minimizing waste and striving to use every part of the ingredient.  

Another key aspect of his cuisine is the focus on aesthetics: Francesco not only plays with ingredients to enhance flavor and create captivating pairings but also emphasizes presentation, transforming each creation into a fully immersive sensory experience.  

Currently, he is the Chef at Tenuta Valcurone, a Restaurant nestled in the scenic beauty of the Curone Valley Regional Natural Park in Montevecchia (LC). 

Tenuta Valcurone is owned by the Ghezzi family, well-known wine entrepreneurs from Brianza and passionate advocates for local food and wine resources, with a desire to restore, share, and revitalize this area rich in local people, products, and heritage.
